Big Girl Salad

We have always had a love hate relationship with salad. We were never those kids that ate their salads during dinnertime, never would we go out of our way to order one at a restaurant, and God knows we would never make one ourselves. But as we get older, and have to make our own dinner, we discovered that making a salad might not be such a terrible thing.

Let’s start with the self-made definition of a “Big Girl Salad”

A Big Girl Salad: is a salad that was intended for a woman of independence, insane work ethic, and intense passion to eat in order to carry out her daily duties. These so-called salads pack powerful punches of protein, fiber, and obviously necessary vitamins and nutrients that make us “big girls” keep up with everything life throws at us!

So let’s start with THE BUDDHA BOWL. This was our favorite of the four, only because of the color that comes out of this picture!! Sorry but isn’t this just gorgeous! This salad is great for to-go lunch for work, picnic or whatever the case may be.

  • Kale
  • A handful of Cherry Tomatoes
  • Feta Cheese
  • ¼ cup Brown Rice and Quinoa blend
  • ¼ Avocado
  • ½ Yam
  • Pepper for seasoning

THE BREAKFAST SALAD. Super easy to make and with five simple ingredients it’s a great morning treat that won’t take you nearly as much time as a smoothie.

  • 1 soft hard boiled egg
  • ½ of an avocado
  • 2 pieces of bacon (I choose to use turkey bacon)
  • ½ cup of kale
  • Salt and pepper for seasoning
  • Olive oil for dressing

Not into all the greens? Try the brown rice and quinoa creation we tried out.

  • 1 packet of brown rice
  • 1 packet of quinoa
  • 1 can of grilled corn
  • ½ avocado

The bottom line is that sometimes it’s hard to be healthy. But that’s okay! Cravings, whether a margarita from the Cantina or a margarita pizza are never a bad thing! Never resist- just know that it is all a balancing act!

Being healthy can be easier by being creative! So get creative with these salads- mix them up, make them spicier, so on and so forth! It’s all about the details.
